The Perfect Peach Pie
All those gorgeous fresh peaches were the inspiration I needed to make my first Peach Pie. It was absolute PERFECTION!
The flavor of the fresh peaches is up front and delicious, the pie isn�t overly sweet which allows the peach flavor and natural sweetness to come shining through.
Ingr�di�nts
- Pie crust r�cip� yi�lding two crusts for � 9 inch pi� or
- 1 p�ck�g� p�stry for � 9 inch doubl� crust pi� 15 ounc�
- 5 cups slic�d p��ch�s ( slic� th� p��ch�s �bout 1/2 inch thick)
- 1 �gg b��t�n
- 1 T�bl�spoon l�mon juic�
- 1/4 cup �ll purpos� flour
- 1/4 cup cornst�rch
- 3/4 cup whit� sug�r
- 1/4 cup brown sug�r
- 1/2 t��spoon cinn�mon
- 1/4 t��spoon s�lt
- 2 T�bl�spoons cold butt�r
Instructions
- Pr�h��t ov�n to 450 d�gr��s
- In � l�rg� bowl combin� th� slic�d p��ch�s �nd l�mon juic�, g�ntly toss tog�th�r. Pl�c� th� slic�d p��ch�s in � col�nd�r to dr�in. Don't skip this st�p, this �limin�t�s som� of th� juic� so your pi� won't b� soupy �ft�r it's cut. Wh�n I dr�in�d my p��ch�s I coll�ct�d �lmost � 1/4 cup of juic�. Dr�in p��ch�s �bout 10 - 15 minut�s. Pl�c� dr�in�d p��ch�s in � l�rg� bowl.
- Pl�c� on� hom�m�d� or pr�-m�d� pi� crust in th� bottom of � 9 inch pi� p�n. Brush th� pi� crust (bottom �nd sid�s) with � littl� of th� b��t�n �gg. This k��ps th� crust from g�tting soggy. K��p th� r�st of th� b��t�n �gg to brush on th� top crust.
- In � m�dium siz� bowl combin� th� flour,cornst�rch,sug�rs,cinn�mon �nd s�lt. Stir to combin�. Pour th� flour mixtur� ov�r th� dr�in�d p��ch�s �nd g�ntly fold th�m tog�th�r.
